In our continual celebration of great food, wine and friends, Executive Chef-and New Owner Allen Hess has taken the reins at Huli Sues Waimea, bringing the farm to fork concept to a whole new level. Our menu showcases only the freshest local and sustainable produce, cheeses, fish and meats sourced from neighboring farms, sea and ranches.
Chef Allen Hess most recently was the executive chef at Merrimans, Sous Chef for Alan Wongs at Hualalai and began his career in Hawaii at Roys. He is a graduate of the California Culinary Academy and is greatly ensconced in the Hawaii Slow Foods Movement.
